Why I like this? I have several reasons:
1) I think the food should break from tradition. Young is the best person does it very good. His father opened steakhouse. Young worked in this family restaurant for 20 years. It is one of the area’s best steakhouses. But Young could did the things he want to do. He not always to do the things of family tradition, this is great. I think most people might give up the idea what they want and to do something have matured. Because this is more likely to succeed. But I think if you do not love to do that, then the work to bring you unhappy results. Especially for make food. When the guests eating the food, their feelings will follow the chef change. Not passionate chef can make something delicious. So his passion can bring the food the best performance and taste.
2 ) The new creation is the most unique and valuable. Young sold his Po-boy in the bicycle shop. I have never seen anything like this way to sell the food. The creation of new food may not be the increase in the food itself, but a change of attitude.
